Pickled Mushrooms

Tuesday was World Vegan Day, ie the day of those who have decided that their lives entail the least possible suffering for all living things and to do so, do not hesitate to not eat or use anything that originates or caused suffering to animals.

With this conclusion, I remembered that I had left with the desire to prepare this recipe for pickled mushrooms, seeing a comment on the post I wrote titled Mikel Iturriaga "perfect pickled anchovies". The comments indicated a link to the blog "Plant and such", and in it, the person who wrote it said they were a perfect choice to make "some anchovies in vinegar" but without anchovies. And of course, I'm not vegetarian, but I have drastically reduced my consumption of meat and fish in recent years and have increased as much as possible of fruits and vegetables, I kept the intrigue of whether pickled mushrooms really tasted the same anchovies or not that I like.

Verdict, guilty, pickled mushrooms are very much like the anchovies in vinegar, albeit with a touch of vinegar deeper because you'll quickly suck it. So to those who like anchovies in vinegar, I'm sure this recipe will not disappoint you, as well as being very rich, is much easier to prepare than the anchovies and cheaper ... Enjoy.
Ingredients for two:
Tightly closed and white mushrooms (about 250 gr.)
Vinegar amount necessary (if you really like the taste of vinegar, wine uses one normal, if you like softer, use cider or sherry)
Oil to taste
Garlic (between 2 and 4, according to taste and garlic flavor)
Chopped parsley to taste
Salt to taste

Production of mushrooms vinegar:
1 - Clean the mushrooms well, removing all traces of dirt.
2 - Cut into slices about 2-3 mm thick, trying to keep more or less the thickness at all (although we must not become obsessed with it).
3 - are layered in a large bowl, seasoning coats entity to taste. Cover with vinegar and are chosen puts a weight on top to sink, as they tend to float.
4 - let stand 10 to 20 minutes, depending on the flavor you want him vinegar and slice thickness. After this time, drain well, encouragement a little to loosen the excess vinegar that have sucked.
5 - We chopped garlic, parsley and olive oil (you can prepare in a mortar or chop with knife) and watered him mushrooms. The mix a little and let it take at least 4 hours covered with plastic wrap or a lid ... Delicious to eat with chips or just as a delicious snack.
