I know my father would have asked this Rice with Tomato and as time ago that I do not publish a recipe of rice because here's the recipe for making tomato rice with my mother and I love it.
Ingredients for Tomato Rice (for 2 people):
1 glass tube (the long) with short grain rice (normal)
2 ½ cups (also long) with chicken or bird
400 grams of canned crushed tomatoes
40 grams of onion
5 frying peppers (or Italian)
200 grams of potatoes
4 tablespoons olive oil
Frying oil (Sunflower or similar)
salt
Recipe for Rice with Tomato (for two people):
Peel the potatoes, cut them into small cubes (see photo) and fry (in the fryer or skillet). When you are done (do not let them brown) and leave them aside to drain on paper towels.
Chop the onion finely and put fire in a pan with four tablespoons of olive oil. Add a pinch of salt.
While pocha take one onion and peppers Picalo fine. When the onion is added pepper poached.
When the vegetables are ready add the can of crushed tomatoes and leaves over medium heat about 8 minutes to make the tomato.
While heat the chicken stock or poultry and tomatoes when we add the hot broth. If you do not have broth with half concentrated bouillon.
Mix well and wait for it to boil the broth (if needed up heat slightly). When the broth boils add the rice. Stir and cook until almost all the stock suck.
While fry the peppers with which acompañares tomato rice. A check them once fried salt and reserve on paper towels.
When rice is try and if necessary add salt to taste. Add fried potatoes with tomato and rice served with fried peppers accompanied (see photo). Off the kitchen and get lunch!
To eat:
As always every house is different, my girlfriend does not want to let me take the potatoes with tomato rice but then when it proved not say "or mu" ;)
Typically accompanied with tomato rice with fried peppers, but if they are right for you take them off of the prescription period.
If you have canned crushed tomatoes tomato sauce can take, not the same but it is very handy. In this case you just have to let the tomatoes just fire a couple of minutes. If you prefer to use in the recipe tomato skin and scrape out the seeds and let them have more time to fire the canned tomatoes, about 15 minutes.
