Meatloaf, potatoes and vegetables

There is a video of Loli Morales Cocina.tv a recipe for rice with vegetables, which last week inspired me to make this meatloaf, potatoes and vegetables. Both Loli recipe like mine, are based on the philosophy that while a conviction that the refrigerator is not pulled anything, however small the amount, provided it is in perfect condition, clear is.

It's amazing what you can do, and how rich he may be, using leftovers from the fridge: a little of this, a little of that ... Yes, you can mix to mix, and everything has a process and its order, so I relied on an old recipe for a vegetable pie my mother made ​​me, to shape the tasty recipe that I present below: meatloaf, potatoes and vegetables.
Ingredients for 5 people:
3 potatoes grandecitas
1 zucchini
400 grams of minced meat
5 slices of chorizo
3 frankfurters
3 medium leeks
4 green peppers
7 slices of cheese
salt
oil
pepper

Preparation:
1. Boil the potatoes with salt. Once warm (not cold because it is very difficult if not peel) the peel, the loncheamos and make a base in a baking pan, covering it all very well. On potatoes, spiced minced meat cast, and give out either on the basis of boiled potatoes, meat crushing even using a spoon.

The recipe for meatloaf, potatoes and vegetables supports many variations. Everyone can enrich or simplify it according to their tastes, as if it were a pizza. Although I have done as indicated in the recipe, I think there are a number of steps that I'm sure will improve the outcome of this already rich cake. A variation may be to create a potato puree, and mix in two beaten eggs. A ground beef, well, you could add some pate. Instead of sliced ​​cheese, you can also put grated cheese. The chorizo​​, meanwhile, can be ignored, or can be given prominence (for its intense flavor), throwing double or triple the amount used here.Enjoy it!
