Tuna fillet cooked on cream verdins

For years, every time I go on vacation instead of bringing the memory typical of each area, and then I buy local products, at home, remember some of the feelings I experienced during that time between bites.

From my visit to Barbate, plus pics from our visit to the restaurant El Campero, I brought in my suitcase some extraordinary tenderloins cooked vacuum packed tuna.

The tuna steak is a sterilized product cooked and vacuum packed, you do not need cold, and has a one year expiration date. That is why I chose him and other pates of those who already speak unto you, when we visited the factory of salted, canned and smoked "La Chanca".

This great product has been the star of the recipe that we show today, tuna fillet cooked on verdins cream. A delicious proposal that we can serve both as a starter, if you put it on a plate in the center of table, or as a main dish in less amount you see in the pictures.
Ingredients cooked tuna fillet on verdins cream for 4:

     200g cooked tuna fillet
     Beans 200g Verdina
     1 onion
     5 g Ginger
     1 tablespoon sesame seeds
     Paprika
     3 tablespoons cream 35% M.G.
     1 Garlic
     Olive oil
     8 basil leaves
     salt
 
Preparation:

Prepared tuna fillet cooked on verdins cream:
Yesterday we verdins soak the beans with water and a pinch of salt. The next day, drain and wash.
We boil water in a saucepan. When it starts to boil add the beans, salt to taste, garlic and ginger and onion peeled, peeled and cut into quarters.
Let cook until tender. We removed the ginger a bit of cooking water, just enough so that when the verdins trituremos, we have left a thick cream.
We removed the piece of ginger and crushed with the aid of a blender or Thermomix, until a fine and homogeneous puree.
Add the cream, mix well and rectify the salt, if necessary.
We roast in a pan sesame.
Grind the basil leaves with 4 tablespoons extra virgin olive oil.
We cover the base of a fountain or four dishes verdins cream.

Cut the tenderloin into slices cooked tuna two or three millimeters.
We distributed over bean cream. Scatter over some toasted sesame seeds, a few drops of basil oil and a little paprika.
Serve at the table and tasted the tuna fillet cooked on verdins cream.
