Pickled Anchovies

I love the pickle, that technique as old as wonderful food preservation. I like your taste, better overnight, we try to be gentle, never too strong or abusing unknown species in the first recipes and uses.

The anchovies are one of those fish for which sighs in the kitchen of my house, rich in omega 3 are always welcome at our table.

As it should be combined, as it turned out, delicious.

Ingredients for 4 people:
     750 grams of anchovies clean
     Mlt 100 olive oil.
     An onion.
     Garlic, six teeth.
     Cider Vinegar, 150 cubic centimeters (ie, about 3/4 of a glass of water).
     White wine, best of Montilla, 250cc
     Paprika, half teaspoon.
     Freshly ground black pepper, to taste.
     Thyme.
     Nail.
     Laurel.
     Sal.
     A little bit of sugar to cut the acidity.

preparation:
Add a little oil to fry the garlic clean laminate. Once browned, add freshly ground black pepper, thyme, cloves, bay leaf, salt and a little sugar. Sauté the set to blend flavors, remove and let cool.

Add to all that you've poured into a pan, 100 cubic centimeters of olive oil, white wine 250 other, better Montilla and 150 more than a good cider vinegar.

Allow ten minutes mix simmer.

Will be richer next day, so you should do it the previous evening.

This dish you can enjoy it hot or cold, or better tempered as we enjoy ourselves.
