Salmon Crepes

Ingredients (serves 6):
3 eggs
A cup of flour
A cup of milk
butter
salt
100 ml. of cream
400 gr. smoked salmon
100 gr. Parmesan cheese

Preparation:
1. Beat 3 eggs.
2. Add the flour while stirring, then milk, a tablespoon of butter and a little salt. Pass the mixer until dough is smooth.
3. Let stand for about 2 hours in a cool, dry place.
4. In a skillet over medium heat (nonstick or ceramic, and medium size) throw a knob of butter and melt.
5. Pour the bucket half pancake and well spread throughout the pan. After 30 seconds or so, turn around. Remove, book, and repeat until all the dough end. (They have to leave at least a dozen pancakes).
6. Take a slice of salmon in the center of each crepe, along with a bit of Parmesan and a drizzle of cream.
7. Roll the crepes, and place on baking paper on a baking tray.
8. Pour a thin layer of Parmesan cheese over the crepes and place in a preheated oven at 200 ° C, until cheese is browned.

The flavor of the pancakes, if very soft, fits well with the smoked salmon. The result is excellent, you'll see.
