INGREDIENTS:
1 cup rice (Bright goes well)
1 green pepper
1 small onion
4 cloves of garlic
2 tablespoons oil
2 tablespoons lemon juice
A bit of laurel, dye and parsley
PREPARATION:
Chop the onion and pepper. Put oil in a pan and saute the garlic, onion and bell pepper.
When the onion and pepper are soft add the rice, saute a few minutes and add 2.5 cups of water. When it starts boiling, put the dye, a couple of bay leaves and salt to taste. Cover the pan and simmer about 20 minutes (try the rice is tender).
Let stand 15 minutes, add the lemon juice and serve in individual bowls, garnished with the chopped parsley on top.
