Cod croquettes

Many times when unexpected guests receive, do not know what to pick out, but if we croquettes, prepared an omelette and any other little thing, we have a quick and tiing pecking much. So I always like to make a good batch of croquettes and have them frozen.

Usually different patties usually made, not tire of eating always the same. Furthermore croquettes serve to take the food that we do not feel like eating at the time, and before that you bad, do some delicious cakes, and freeze. As I always say, you can not throw anything away, there is always a different way to take it, not to eat the food provided in the same way.

On this occasion, had bought cod cod for gold, because they would come to dinner some friends, and as the end dinner was canceled, and it was hard to eat it ourselves, because I used half to make these croquettes and freeze, order to have them ready for another day.

ingredients
     Ingredients for the filling:
     200g unsalted flaked cod and
     1 egg
     2 tablespoons flour rasas
     200ml milk
     salt
     parsley
     Extra virgin olive oil
     Ingredients for the batter:
     flour
     egg
     breadcrumbs

instructions
     In a saucepan with water, put to cook the egg, since it begins to boil about 10 minutes.
     Fry the cod with parsley and salt in a pan with a drizzle of extra virgin olive oil.
     Meanwhile, peel the egg and grate it with a grater, or if you prefer the chop.
     When the cod is cooked, add the grated egg and mix.
     Add the flour and mix well to cook a little, but it will not burn.
     We are adding the milk gradually, stirring constantly to avoid lumps, we have to be a little espesita. More or less until it comes off the pan.
     Put the dough in a pastry bag, you have the hole size you want to make the croquettes, but tying a knot in the hole so it does not slip while cooling.
     When cool the dough, put flour in a bowl and let the dough making churros we have in the manga and cut the size you want the croquettes, then rebozamos flour. Thus with whole mass.
     Now beat the egg in a dish and we are passing the croquettes in the egg and finally the breadcrumbs we passed.
     We fry or freeze.
