Omelette with piquillo peppers

In summer there is nothing more relieved when visiting home presents a good omelette, this time to do the classic we added a few pieces of red pepper delicious!, Totally recommended, the omelette is eaten in all households and each has their own recipe, I always wondered how a basic recipe can go so many similar recipes yet different, and all so good, the answer is simple when the raw material is good the result is excellent, you think so?.

In addition to our beloved traditional omelette can get countless different elaborations version one simple yet so rich, we love the result and we do many times, we have a new version of our tortilla, we know that surprise our guests at our next dinner.

This time I have done with onions but you can do without it if you do not like, but the flavor will change slightly if not much better suit you remove it, with a little bread we have a nice dinner, we accompany this omelette with peppers piquillo with a mixed salad.

Omelette with piquillo peppers
ingredients
     8 eggs size L
     4 red peppers
     salt
     Hot 200gr
     Sized potatoes 730gr chascadas
     50g extra virgin olive oil
     150g onion

instructions
     Prepared with Thermomix
     Stir onion into quarters into the glass and program, 5 seconds, speed 4, with spatula remains low.
     Stir in oil and program, 10 minutes, varoma, speed 1.
     Put the butterfly, add the potatoes cut into medium pieces, hot water, salt, program, 17 minutes, varoma, speed spoon.
     Remove the potatoes to a bowl, rinse the glass.
     Removes and incorporates butterfly eggs, 1/2 teaspoon salt, program 10 seconds, speed 4.
     Stir in potatoes and red pepper in the glass and program, 6 seconds, speed 3.
     Incorporates a splash of oil in the pan and introduces cuájala tortilla over medium-low, when you see it half flip curd and keep between plus or minus 2 minutes over a little stronger.
