Golden Cod with Salmon

The golden cod, being made of fish, potatoes, eggs, spices and olive oil, is a worthy representative of Mediterranean cuisine. In this case, I changed the recipe slightly typical Portuguese introducing a slice of fresh salmon. The result was a touch of color, in the purely visual, and a pinch of softness in taste.
In short, the golden cod with salmon is one of those recipes that define the philosophy of Blogcocina, for easy, rich, by sound, and adapt to any situation (formal dinner or lunch daily).
Ingredients for a golden cod with salmon for 2 people:450 gr. desalted cod200 gr. fresh salmon1/4 of onion2 large potatoes3 eggsParsleyOlive oilSalt
Preparation of gold cod with salmon:1. In a roasting pan with about 5 tablespoons olive oil, slowly sauté thinly sliced ​​potatoes and shaped straw.2. When the potatoes are golden brown, drain the oil and let rest in a separate dish. Meanwhile, in the same roasting pan, over low heat, fry the chopped onion previously (finely chopped). While the onion is becoming, we crumbled the cod (which has to be desalted *) and salmon, removing any bones.3. When the onion is transparent, we'll take the crumbs rustidera cod and salmon, and will remove for a few minutes, until they lose water. Add also a handful chopped fresh parsley, and salt to taste.4. Then we'll take the potatoes well drained oil, and finally, with the fire removed, add eggs unbeaten, will remove, and let it curdle just, for the gold with salmon cod we make it as juicy as possible.
In the end, as if it were a salad, you can dress with golden cod salmon with olive oil, for a touch of flavor and moisture to the dish.
* For desalting cod, must be taken about two nights in water, changing the water three times. But if you want to spare you this way, you can buy frozen and desalting.
